Apple Jam Muffins / Cupcakes
Ingredients:
- 1 cup all-purpose flour
- ½ cup sugar
- 1 tsp baking powder
- ¼ tsp baking soda
- 1 egg
- ¼ cup oil or melted butter
- ½ cup milk or yogurt
- ½ cup apple jam
- (Optional: cinnamon pinch or chopped nuts)
Instructions:
- Preheat oven to 180°C (350°F). Line muffin tray with paper cups.
- In a bowl, mix dry ingredients: flour, sugar, baking powder, soda.
- In another bowl, whisk egg, oil, milk and mix in apple jam.
- Combine wet and dry mixtures — don’t overmix.
- Spoon into muffin cups (¾ full).
- Bake for 18–22 minutes, until golden and a toothpick comes out clean.
Apricot Jam Cheesecake Topping
Ingredients:
- ½ cup apricot jam (seedless, smooth preferred)
- 1–2 tbsp water (to thin, if needed)
- 1 tsp lemon juice (for brightness)
- (Optional: ½ tsp vanilla extract or a pinch of cinnamon for flavor twist)
Method:
- Heat the jam In a small saucepan, add apricot jam and 1 tbsp water.
- Simmer gently Warm over low heat, stirring constantly, until the jam becomes glossy and smooth (2–3 minutes). Add a bit more water if it’s too thick.
- Flavor it Stir in lemon juice and optional vanilla or cinnamon.
- Cool slightly Let it cool for 2–3 minutes so it’s warm, not hot.
- Spread on cheesecake Pour or spoon the topping over your chilled cheesecake, and gently spread it evenly using a spatula.
- Chill again (optional) Refrigerate for 15–30 minutes to help the topping set before serving.
Cherry Jam Bars Recipe
Ingredients:
For the base & crumble:
- 1½ cups (190g) all-purpose flour
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup (113g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- 1 egg
- ½ tsp vanilla extract
For the filling:
- ¾ cup (180g) cherry jam (seedless preferred)
- (Optional: ½ tsp lemon zest or a pinch of cinnamon
Instructions:
- Preheat oven to 175°C (350°F). Line an 8×8 inch (20×20 cm) pan with parchment paper.
- Make the dough:
- In a bowl, cream together butter and sugar until light and fluffy.
- Add egg and vanilla, mix well.
- Stir in flour, baking powder, and salt to form a soft dough.
- Layer the base:
- Press 2/3 of the dough into the bottom of the pan evenly.
- Spread the cherry jam over the dough (leave a small border).
- Add the crumble:
- Crumble the remaining 1/3 dough over the jam using your fingers.
- Bake:
- Bake for 25–30 minutes, or until golden on top and jam is bubbling slightly.
- Cool & slice:
- Let cool completely in the pan.
- Cut into bars or squares once set.
Mix Fruit Jam Swiss Roll (Quick Version)
Ingredients:
- 3 eggs
- ½ cup sugar
- ¾ cup all-purpose flour (maida)
- ½ tsp baking powder
- 1 tsp vanilla
- ½ cup mix fruit jam
Instructions:
- Preheat oven to 180°C. Line a rectangular tray with baking paper.
- Make batter:
- Beat eggs + sugar until fluffy.
- Add vanilla, then gently fold in flour + baking powder.
- Bake:
- Pour batter into tray.
- Bake 10–12 mins (light golden, soft).
- Roll:
- While warm, place cake on towel/parchment, roll gently & let cool.
- Fill & re-roll:
- Unroll, spread jam, then re-roll tightly.
- Chill & slice.
- Let set 15–20 mins in fridge. Slice and serve!
Fig Jam Glaze (Quick Recipe)
Ingredients:
- ½ cup fig jam
- 1–2 tbsp water (to thin)
- 1 tsp lemon juice (adds shine & balance)
- (Optional: pinch of cinnamon or vanilla)
Instructions:
- Heat:
In a small pan, add fig jam + water. - Simmer:
Warm gently on low heat, stir until smooth and pourable. - Add lemon juice:
Mix in for flavor and shine. - Strain (optional):
For extra smooth glaze, strain before using. - Apply:
Brush warm glaze over pastries right after baking, or drizzle on cooled desserts.
Mulberry Jam Cream Cheese Tartlets
Ingredients (for 6–8 mini tartlets):
- 6–8 mini tart shells (ready-made or homemade)
- ½ cup mulberry jam
- ½ cup cream cheese (softened)
- 2 tbsp powdered sugar
- ½ tsp vanilla essence
- Fresh mulberries or mint for garnish (optional)
Instructions:
- Make the filling:
Beat cream cheese + powdered sugar + vanilla until smooth and creamy. - Assemble tartlets:
- Spread 1 tsp mulberry jam in the base of each tart shell.
- Pipe or spoon the cream cheese mixture on top.
- Add a small swirl of jam over the cream layer (for design).
- Garnish & chill:
- Top with fresh mulberries or a mint leaf.
- Chill for 30 mins before serving.
